Key Lime Pie (No-Bake)

The Key lime is a citrus hybrid with a spherical fruit, 2.5–5 cm (1–2 in) in diameter, that is yellow when ripe but usually picked green commercially. It is smaller and seedier, with a higher acidity, a stronger aroma, and a thinner rind than that of the Persian lime It is valued for its unique flavor compared to other limes. The name is derived from its association with the Florida Keys, where it is best known as the flavoring ingredient in Key lime pie. I’ve made Key Lime Pies many different ways and I now have two recipes that I use: A no-bake, no egg yolk pie and a traditional classic version that gets baked for a short time.
 
I came up with this no-bake version last summer when friends invited us to dinner at their house, last minute. I didn’t have much time and wanted something cool and refreshing. This version is much quicker and easier than a traditional Key Lime Pie and will definitely do in a pinch. When I make traditional Key Lime Pie, I purchase the tiny Key Limes and usually use a whole bag for one pie! For this simpler version, I purchased Key Lime Juice. I prefer the fresher and brighter taste of the fresh limes, but again, this will do in a pinch. Our friends loved it!

Ingredients
  • 1 8 oz. package cream cheese, softened
  • 1 can sweetened condensed milk, either whole, low-fat, or fat-free
  • 4 oz. (1/2 cup) key lime juice (regular lime juice can be substituted)
  • 1 teaspoon vanilla
  • 1 package pre-made graham cracker crust pie shell
  • Optional: Whipped Cream
Instructions
  1. Please softened cream cheese in the bowl of a stand mixer and mix on medium speed until smooth. Add the sweetened condensed milk and mix until smooth. On low speed, add the vanilla and lime juice and mix until thoroughly combined.
  2. Pour the mixture into the prepared crust and refrigerate 4 hours. If desired, top with whipped cream and lime zest.
